Dark cookies


Serves : 25 cookies




250g dark chocolate

250g organic butter, softened

2 dl vry strong coffee

2 tbsp cocoa powder

2 pinches of salt

250g organic brown sugar

4 organic eggs, beaten

400g organic (whole) wheat flour

½ tbsp baking powder

250g dark chocolate chips




 1) Melt the dark chocolate, butter and cocoa powder in a pot on low temperature. Then add the coffee.

 2)In a bowl, whisk the eggs and brown sugar together for a while.

 3)In a second bowl, mingle the flower, baking powder and chocolate chips together.


Mix 1) 2) and 3) till homogenous and leave it to cool for a couple of hours in fridge.


3) Heat oven to 200C/fan with a bowl of hot water at the bottom.


Make +/- 25 balls and place them on a baking tray covered with parchment paper (or a silicon baking sheet). Space them out because they will get flat. You’ll probably need to do this twice given the amount of cookies.

Anyway, cook for +/- 8-10 minutes.
