Garlic & sweet potato soup
Serves 4 people
Warning : vampires & lovers should keep away from this recipe ;)
2 medium garlic heads
3 medium sweet potatoes, peeled & cut in large bits
1.5l of chicken (or veg) stock
Salt & pepper
A few roquette leaves
Heat the oven 180°C/fan. Place the unpeeled garlic in an oven dish and cook for 20/25 min.
Pre-boil the sweet potatoes in salted water for 10 minutes.
Heat the stock and add the drained potatoes. Add the inside of the garlic (without peel) but keep 8 roasted cloves for decoration. Simmer till sweet potatoes are tender. Leave it to cool down. Blend together and sprinkle with roquette leaves & roasted garlic cloves.
